This Indian chicken curry recipe is so easy, my 8 year old makes most of it on her own! The measurement for curry powder and extra spices are just a starting point, so add more to your liking. Our family likes strong flavors, so we add double the amount or more, depending on the day.
Chicken Curry Recipe
Ingredients
1 T vegetable oil
1 small onion, chopped
1 clove garlic, crushed
1 T curry powder
1/2 T mustard and/or cumin seeds (optional)
1/2 t salt
1 whole boneless, skinless chicken breast, cut into 2-inch chunks
1 cup coconut milk
2 cups hot cooked rice (we like Basmati for this recipe)
Directions
1. Heat the oil in a medium-sized pot, on medium-high heat. Add onion and garlic and sauté for 5 mins.
2. Stir in curry powder, mustard & cumin seeds, and salt.
3. Add the chicken and lightly sear for no more than one minute.
4. Pour coconut milk over the chicken
5. Bring coconut milk to a boil, then reduce the heat to low. Simmer, uncovered, stirring occasionally until the chicken is cooked through (about 10 mins).
6. Serve over cooked rice.
